Guacamole

Guacamole is another Mexican staple. Personally, I love guacamole!  It's very quick to make.  You can have it as an appetizer for your guests or as a topping for fajitas, chimichangas or burritos. Also, it's a great topping for a veggie burger or in a taco salad.

As you know, the main ingredient in guacamole is avocado. Avocado is a fruit that's full of Vitamin E, Fiber, Potassium, Vitamin C, and Vitamin B6. It contains heart-healthy monosaturated fats, helps to provide antioxidants in your body. It provides our body with essential amino acids. It is rich in potassium to help maintain healthy blood pressure. This fruit is too amazing not to eat! Don't miss out on all the goodness!

Also, I like to use avocados in my green smoothies. It gives it that rich, smooth flavor and helps to keep you fuller longer.

What's the secret to good guacamole? It's in the avocados! You want to pick a soft avocado, but not too soft because it will be too ripe and have some black spots inside. I won't suggest using "lite avocados" for your guacamole.  They sell them here in Florida. It won't have that delicious creamy texture and will taste watery. (Trust me, I've tried them!)

Guacomole Recipe:

Ingredients:

2 ripe avocados, peeld and pitted

1/2 half of finely diced small red onion

1 tablespoon fresh lime juice

1/4 teaspoon sea or Himalayan salt

1 tomato, cored and chopped

1-2 cloves of minced garlic

1 tablespoon, cored and finely diced jalapeno (optional)

Instructions:

In a mixing bowl, mash the avocados.

Add the rest of the ingredients.
